THE EASIEST BANANA BREAD EVER
B and I have been trying really hard lately to make a conscious effort to waste as little food as possible. I hate throwing stuff away because I know there are people all over the world who would NEVER let food go to waste and would do anything for the things we so often toss on the trash. With this in mind, I have really made a strong effort to get resourceful with my recipes as well as salvaging food even when it’s maybe a little too ripe or on the verge of going bad….a little chopping goes a long way! In this attempt I turned around to find some fairly brown bananas on our kitchen counter the other night and though normally I would just throw them in the freezer for smoothies, the cooler weather inspired me to make one of my favorites: homemade banana bread! I found this recipe on Simply Recipes via Pinterest and it has already been added to my recipe box! Don’t throw those brown bananas away!!! Make this yummy banana bread instead! Your family and tummy will thank you
2-3 very ripe bananas, peeled
1/3 cup of melted salted butter
1 tsp baking soda
pinch of salt
3/4 cup granulated sugar
1 large egg, beaten
1 tsp vanilla extract
1 1/2 cup all-purpose flour
Preheat oven to 350ºF and line a 4×8 loaf pan with parchment paper.
In a large mixing bowl, melt the butter in the microwave. break peeled bananas into halves and smash with a fork, mixing with the melted butter until smooth.
Add the beaten egg, flour, baking soda, salt, vanilla extract, sugar and mix well until well combined.
Pour the batter into your prepared loaf pan. Bake for 50 minutes and check doneness with a toothpick. If your bread isn’t quite done, cover the top gently with foil and bake for 5-10 more minutes.
Remove from oven and let cool. The parchment paper will allow you to remove the loaf very easily. (You can remove the loaf from the pan early to cool faster if you’re impatient like B and I)
